Preparation Method Steps:

  1. Brown the ground beef in a large skillet over medium heat. Drain any excess fat.
  2. Add the onion, green bell pepper, red bell pepper, black beans, corn, and diced tomatoes to the skillet. Cook over medium heat until softened and heated through, about 10 minutes.
  3. Stir in the cheddar cheese, Monterey Jack cheese, and cilantro. Season with salt and pepper to taste.
  4. Place a large tortilla on a flat surface. Spread 1/2 cup of the filling down the center of the tortilla.
  5. Fold the left and right sides of the tortilla over the filling.
  6. Starting from the bottom, roll up the tortilla tightly.
  7. Repeat with the remaining tortillas and filling.
  8. Wrap each burrito individually in plastic wrap.
