Preparation Method Steps:

  1. In a microwave-safe bowl, combine the sugar and 1/4 cup (60ml) of water. Microwave on high for 3-4 minutes, or until the sugar dissolves and turns a light amber color.
  2. Pour the sugar mixture into a 9-inch (23cm) square baking dish and tilt the dish to coat the bottom evenly.
  3. In a large bowl, whisk together the evaporated milk, condensed milk, eggs, vanilla extract, and cinnamon.
  4. Pour the egg mixture over the sugar layer in the baking dish.
  5. Cover the baking dish with plastic wrap and poke a few holes in the wrap to allow steam to escape.
  6. Microwave on high for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the flan cool for 10 minutes before inverting it onto a serving platter.
