Preparation Method Steps:

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of prepared muffin cups.
  3. In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream and vanilla extract. Add eggs one at a time, beating well after each addition.
  4. Divide batter evenly among prepared muffin cups.
  5. In a small bowl, mash raspberries slightly. Spoon dollops of mashed raspberries over the cheesecake batter and swirl with a toothpick.
  6. Bake for 30-35 minutes, or until set and the tops are slightly golden brown.
