Preparation Method Steps:

  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. Cut butter into flour mixture using a pastry cutter or two knives until it resembles coarse crumbs.
  4. Stir in sugar and egg yolk.
  5. Add ice water 1 tablespoon at a time, and mix until the dough just comes together. Form into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  6. In a large bowl, combine strawberries, 1/2 cup sugar, cornstarch, and cinnamon. Stir to coat.
  7. On a lightly floured surface, roll out the dough to a 12-inch (30cm) circle.
  8. Cut out 8 (4-inch) circles from the dough.
  9. Place a dollop of strawberry filling in the center of each circle.
  10. Fold the dough over the filling and crimp the edges with a fork.
