Preparation Method Steps:

  1. Preheat oven to 350°F (175°C).
  2. Season oxtails with salt and pepper.
  3. Heat a large pot or Dutch oven over medium-high heat.
  4. Sear oxtails on all sides until browned.
  5. Remove oxtails from pot and set aside.
  6. Add onion, carrots, celery, and garlic to the pot and cook until softened, about 5 minutes.
  7. Stir in tomato paste and cook for 1 minute.
  8. Add red wine and bring to a boil.
  9. Reduce heat and simmer for 5 minutes, or until wine has reduced by half.
  10. Return oxtails to the pot.
  11. Add beef broth, water, Worcestershire sauce, thyme, and oregano.
  12. Bring to a boil, then cover and reduce heat to low.
  13. Simmer for 3-4 hours, or until oxtails are fall-off-the-bone tender.
  14. Skim any excess fat from the surface of the soup.
  15. Serve hot.
