  1. Preheat oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper.
  2. In a large bowl, beat together the butter and peanut butter until light and fluffy.
  3. Gradually add the sugar, then the egg and vanilla extract, beating well after each addition.
  4. Stir in 2 cups of the mini marshmallows.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Sprinkle the remaining 2 cups of mini marshmallows and the salted peanuts over the top.
  7. Bake for 20-25 minutes, or until the edges are golden brown and the marshmallows are melted and bubbly.
