Preparation Method Steps:

  1. Cook the penne pasta according to the package instructions. Reserve 1/2 cup of the pasta cooking water.
  2. In a large skillet over medium heat, cook the pancetta until crispy. Remove from the skillet and set aside.
  3. Add the mushrooms, onion, and garlic to the skillet with the pancetta fat. Cook until the mushrooms are tender and the vegetables are softened.
  4. Add the white wine to the skillet and cook until reduced by half.
  5. Stir in the heavy cream and bring to a simmer. Cook until thickened, about 5 minutes.
  6. Add the cooked penne, pancetta, Parmesan cheese, and parsley to the skillet. Stir to combine.
  7. Season with salt and pepper to taste. If the sauce is too thick, add some of the reserved pasta cooking water.
  8. Serve immediately, topped with additional Parmesan cheese if desired.
