  1. In a large skillet, heat the olive oil over medium-high heat. Add the steak and cook until browned on both sides. Remove the steak from the skillet and set aside.
  2. Add the bell peppers and onion to the skillet. Cook until the vegetables are tender and slightly browned.
  3. Return the steak to the skillet and add the provolone and cheddar cheeses. Cook until the cheeses are melted and bubbly.
  4. Lay out an egg roll wrapper on a flat surface. Place a scoop of the cheese-stuffed steak mixture in the center. Fold up the bottom corner over the filling, then fold in the sides. Roll up tightly and seal the edges with water.
  5. Repeat with the remaining egg roll wrappers and filling.
  6. Heat vegetable oil in a deep fryer or large skillet to 375°F. Carefully drop the egg rolls into the hot oil and fry until golden brown and crispy, about 2 minutes.
  7. Drain the egg rolls on paper towels and serve hot with your favorite dipping sauce.
