  1. Preheat oven to 375°F (190°C).
  2. Butterfly the pork loin by slicing it lengthwise but not all the way through. Open it flat like a book.
  3. In a bowl, combine the spinach, Parmesan cheese, bread crumbs, onion, olive oil, thyme, salt, and pepper. Mix well.
  4. Spread the spinach mixture evenly over the inside of the pork loin.
  5. Roll up the pork loin tightly and tie it with kitchen twine.
  6. Heat a large skillet over medium-high heat. Sear the pork loin on all sides until browned.
