Preparation Method Steps:

  1. Preheat oven to 400°F (200°C).
  2. Remove stems from portobello mushrooms and discard. Brush mushrooms with olive oil and season with salt and pepper.
  3. Sauté onion, bell pepper, and garlic in a skillet until softened.
  4. Spread marinara sauce evenly over the tops of the mushrooms.
  5. Arrange mushrooms on a baking sheet and bake for 10-12 minutes, or until tender.
  6. Top each mushroom with 2 slices of mozzarella cheese.
  7. Return mushrooms to oven and bake for 2-3 minutes, or until cheese is melted and bubbly.
