  1. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all the liquid has been absorbed.

  3. In a large skillet over medium heat, sauté the red bell pepper, onion, and garlic in olive oil until softened, about 10 minutes.
