Preparation Method Steps:

  1. In a large bowl, whisk together the flour, powdered sugar, and almond flour.
  2. Add the butter cubes and use a pastry cutter or two forks to work the butter into the flour mixture until it resembles coarse crumbs.
  3. Add the vanilla extract and half of the beaten eggs. Mix until a dough forms.
  4. Divide the dough into two equal parts, wrap them in plastic wrap, and refrigerate for at least 30 minutes.
  5. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  6. On a floured surface, roll out one half of the dough to a thickness of 1/8 inch.
  7. Use a cookie cutter to cut out round cookies.
  8. Repeat steps 6-7 with the remaining dough.
  9. Place the cookies on the prepared baking sheet.
  10. Use a smaller cookie cutter to cut out a circle from the center of half of the cookies.
  11. Brush the edges of the cookies with the remaining beaten egg.
  12. Bake for 10-12 minutes, or until the cookies are golden brown around the edges.
  13. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  14. Spread raspberry jam in the center of the cookies with holes.
  15. Sandwich the cookies together.
