Preparation Method Steps:

  1. Soak the saltfish in cold water overnight or for at least 8 hours.
  2. Rinse the saltfish thoroughly and remove any skin or bones.
  3. Cut the saltfish into bite-sized pieces.
  4. Dice the tomatoes, onions, green peppers, carrots, and celery.
  5. Heat the vegetable oil in a large pot over medium heat.
  6. Add the onions, green peppers, carrots, and celery and sauté for 5 minutes.
  7. Add the garlic, ginger, and scotch bonnet pepper (if using) and sauté for another minute.
  8. Add the saltfish and stir to combine.
  9. Pour in the coconut milk and water and bring to a boil.
  10. Reduce heat and simmer for 25 minutes, or until the vegetables are tender.
  11. Season with salt and black pepper to taste.
  12. Stir in the lime juice and serve hot with rice or your favorite sides.
