  1. In a large pot, brown the sausage and chicken over medium heat. Remove from pot and set aside.
  2. Add the onion, celery, and bell peppers to the pot and cook until softened, about 5 minutes.
  3. Stir in the garlic and cook for 1 minute more.
  4. Add the tomatoes, chicken stock, black-eyed peas, corn, thyme, oregano, black pepper, and salt. Bring to a boil, then reduce heat and simmer for 30 minutes.
