Preparation Method Steps:

  1. In a large bowl, combine the shrimp, green onion, bell pepper, carrots, soy sauce, hoisin sauce, ginger, and black pepper. Mix well and refrigerate for at least 30 minutes to marinate.
  2. Heat the vegetable oil in a large skillet over medium-high heat.
  3. Spoon about 1/4 cup of the shrimp mixture onto the center of an egg roll wrapper. Fold in the sides and roll up tightly, using a little water to seal the wrapper.
  4. Repeat with the remaining wrappers and filling.
  5. In a large saucepan or deep fryer, heat the remaining vegetable oil to 375 degrees F.
