  1. In a large bowl, combine the ground pork, onion, carrots, celery, soy sauce, oyster sauce, cornstarch, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly distributed.
  2. If desired, add the bamboo shoots and water chestnuts to the mixture.
  3. To assemble the siopao, place a dumpling wrapper in your palm and add a heaping tablespoon of the pork mixture. Wet the edges of the wrapper with water and fold over to enclose the filling. Pleat the edges to seal.
