  2. 1 lb Ground Chicken or Beef
  3. 1 Cup Onion, chopped
  4. 2 Cups Red Enchilada Sauce
  5. 1 Cup Sour Cream
  6. 1 Cup Shredded Cheese or Monterey Jack Cheese
  7. 1 tsp Salt and Black Pepper
  8. 2 tbsp Oil for cooking tortillas

Preparation Method Steps:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a pan, cook the ground chicken or beef with chopped onions until fully cooked and browned. Season with salt and black pepper.
  3. In a separate bowl, mix the sour cream and enchilada sauce together.
  4. Take each tortilla and brush both sides with oil. Warm up the tortillas in a pan or steamer until soft and flexible.
  5. Place a spoonful of the meat filling in the center of each tortilla, roll them up, and place them seam-side down in an baking dish.
  6. Pour the sour cream-enchilada sauce mixture over the enchiladas.
