  1. Preheat oven to 400°F (200°C).
  2. Slice the spaghetti squash in half lengthwise, remove the seeds, and brush with olive oil.
  3. Bake the squash face down on a baking sheet for 40-45 minutes, or until tender.
  4. While the squash is baking, season the chicken with salt and pepper.
  5. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  6. Sear the chicken on both sides until browned.
  7. Remove the chicken from the skillet and set aside.
  8. Add the remaining olive oil to the skillet and sauté the garlic, onion, mushrooms, and bell pepper until softened.
  9. Stir in the alfredo sauce and simmer for 5 minutes.
  10. Remove the squash from the oven and scrape the strands from the inside.
