  1. Heat the olive oil in a large paella pan or skillet over medium heat.
  2. Season the chicken with salt and pepper and brown it in the pan. Remove from the pan and set aside.
  3. Add the chorizo to the pan and cook until crispy. Remove from the pan and set aside.
  4. Sauté the onion and bell pepper in the same pan for 5-7 minutes, or until softened.
  5. Stir in the garlic, smoked paprika, and saffron. Cook for 1 minute, stirring constantly.
  6. (Optional) Deglaze the pan with dry white wine. Cook until the wine has reduced by half.

  9. Add the chicken, chorizo, clams, mussels, shrimp, and peas.
