Preparation Method Steps:

  1. Soak the cellophane noodles in warm water according to package instructions, usually for about 10 minutes. Drain and rinse the noodles thoroughly.
  2. In a large bowl, combine the red bell pepper, green bell pepper, onion, carrots, celery, cilantro, mint, sesame seeds, and peanuts.
  3. In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, Sriracha, sugar, garlic, and ginger.
