Preparation Method Steps:

  1. Rinse the sushi rice in cold water until the water runs clear. Cook the rice according to the package instructions.
  2. While the rice is cooking, prepare the sushi vinegar by combining the sushi vinegar, sugar, and salt in a small bowl.
  3. Once the rice is cooked, spread it out in a large bowl and drizzle with the sushi vinegar. Mix gently with a wooden spoon or spatula to combine.
  4. Place a bamboo rolling mat on a work surface. Cover the mat with plastic wrap to prevent the rice from sticking.
  5. Place a sheet of nori on the rolling mat, shiny side down. Spread a thin layer of rice over the nori, leaving a 2-inch border at the top.
  6. Arrange the salmon, tuna, cucumber, avocado, tobiko, and spicy mayo in a horizontal row on the bottom third of the rice.
  7. Roll the sushi roll tightly, starting from the bottom and working your way up. Be sure to tuck in the sides of the nori as you roll.
  8. Wet the top border of the nori with water to help seal the roll.
  9. Cut the sushi roll into 8 equal pieces with a sharp knife.
