Preparation Method Steps:

  1. Preheat oven to 350°F (175°C).
  2. Heat a large skillet over medium heat. Add spinach and sauté until wilted, about 5 minutes. Drain and set aside.
  3. In the same skillet, add onion and garlic and sauté until softened, about 5 minutes.
  4. Add crushed tomatoes, tomato sauce, tomato paste, oregano, basil, salt, and pepper. Bring to a simmer and cook for 15 minutes.
  5. In a large bowl, combine ricotta cheese, cottage cheese, Parmesan cheese, eggs, and spinach.
  6. Spread 1 cup of the sauce in the bottom of a 9x13 inch baking dish.
  7. Layer 4 lasagna noodles over the sauce.
  8. Spread half of the ricotta mixture over the noodles.
  9. Spread half of the remaining sauce over the ricotta mixture.
  10. Repeat layers with remaining noodles, ricotta mixture, and sauce.
  11. Sprinkle the remaining Parmesan cheese over the top.
  12. Bake for 60-75 minutes, or until the lasagna is bubbly and hot throughout.
  13. Let stand for 15 minutes before serving.
