  2. Slice eggplants lengthwise into 1/2-inch thick slices.
  3. Combine breadcrumbs, Parmesan cheese, and 1/4 cup olive oil in a bowl.
  4. In a large skillet, heat remaining olive oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  5. Add ground beef and cook until brown, breaking it up as you cook.
