  1. Preheat oven to 400°F (200°C).
  2. Scrub the sweet potatoes clean and pierce them with a fork. Wrap them in foil and bake until tender, about 1-1.5 hours.
  3. While the sweet potatoes are baking, finely chop the onion, celery, and carrots. Melt the butter in a skillet over medium heat. Sauté the vegetables until softened, about 5-7 minutes.
