- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs and vanilla extract and mix until well combined.
- Gradually add the flour and mix until a dough forms.
- Roll out the dough to a thickness of about 1/4 inch (5mm).
- Cut out 8 circles from the dough using a 3-inch (75mm) cookie cutter.
- Place a spoonful of filling in the center of each circle.
- Fold the dough over the filling and press the edges to seal.
