  1. Heat vegetable oil in a large pot or Dutch oven over medium heat.
  2. Add chicken and cook until browned on all sides. Remove from pot and set aside.
  3. Add onion, garlic, ginger, and lemongrass to the pot and sauté until softened.
  4. Stir in curry paste and cook for 1 minute, or until fragrant.
