  1. Wash and dry the apples. Remove the stems and insert a lollipop stick into the top of each apple.
  2. Line a baking sheet with parchment paper.
  3. In a large saucepan, combine the sugar, corn syrup, and water. Bring to a boil over medium heat, stirring constantly.
  4. Reduce heat to medium-low and continue to cook, stirring occasionally, until the mixture turns a deep amber color, about 10-15 minutes.
  5. Remove the pan from heat and stir in the butter and vanilla extract.
  6. Dip each apple into the caramel, turning to coat evenly.
