  1. Preheat oven to 375°F (190°C).
  2. Cut bell peppers in half lengthwise and remove seeds and ribs.
  3. In a large bowl, crumble tofu into small pieces. Add brown rice, onion, celery, red bell pepper, garlic, oregano, cumin, salt, and pepper. Mix well.
  4. Fill each bell pepper half with the tofu mixture.
  5. Place peppers on a baking sheet and bake for 30-35 minutes, or until peppers are tender and filling is heated through.
  6. Sprinkle with cheddar cheese (optional) and bake for 5 minutes more, until cheese is melted.
