Preparation Method Steps:

  1. In a medium saucepan over medium heat, whisk together the milk, cream, and sugar. Bring to a simmer, stirring occasionally. Reduce heat to low and simmer for 5 minutes, or until thickened slightly. Remove from heat.
  2. In a large bowl, whisk together the egg yolks, nutmeg, and cinnamon. Gradually whisk in the hot milk mixture until well combined. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened and coats the back of a spoon, about 3-4 minutes. Do not boil.
  3. Remove from heat and stir in the vanilla extract. Strain the eggnog through a fine-mesh sieve into a clean bowl. Stir in the rum.
  4. Refrigerate the eggnog for at least 4 hours, or overnight, before serving.
  5. To serve, pour the eggnog into chilled glasses and top with whipped cream, nutmeg, or a cinnamon stick, if desired.
