Preparation Method Steps:

  1. Preheat the oven to 350°F (180°C).
  2. In a large bowl, combine the flour, sugar, baking powder, and lemon zest.
  3. In a separate bowl, whisk together the eggs, vegetable oil, lemon juice, and lemon curd.
  4. Pour the wet ingredients into the dry ingredients and mix well until combined.
  5. Pour the batter into lined cupcake pans, filling each cupcake about 2/3 full.
  6. Place in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Allow to cool completely before frosting.
