  1. Preheat oven to 400°F (200°C).
  2. Press tofu firmly between paper towels or a tofu press to remove excess moisture. Cut into 1-2 cm cubes.
  3. Toss sweet potato cubes, mushrooms, bell pepper, carrots, snow peas, and bean sprouts with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast in preheated oven for 20-25 minutes, or until tender-crisp.
  4. While vegetables are roasting, make the tofu marinade. In a bowl, combine rice vinegar, soy sauce, sesame oil, ginger, garlic, and optional brown sugar. Add tofu cubes and stir to coat.
