Preparation Method Steps:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add mushrooms, onion, and garlic and cook until softened, about 5 minutes.
  3. Stir in marinara sauce and bring to a simmer. Reduce heat to low and cook for 15 minutes, or until sauce has thickened.
  4. In a large bowl, combine ricotta cheese, cottage cheese, mozzarella cheese, and half of the Parmesan cheese.
  5. Spread 1 cup of marinara sauce in the bottom of a 9x13 inch baking dish.
  6. Place 6 lasagna noodles over the sauce.
  7. Spread half of the ricotta mixture over the noodles.
  8. Top with half of the mushroom mixture.
  9. Repeat layers.
  10. Sprinkle remaining Parmesan cheese on top.
  11. Bake for 30-35 minutes, or until cheese is melted and bubbly.
  12. Let stand for 10 minutes before slicing and serving.
