  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplant into 1/2-inch thick rounds and fry in olive oil until golden brown. Remove and set aside.
  3. Boil the potatoes until tender and set aside. Peel and dice the bell peppers.
  4. In a large baking dish, layer the eggplant slices, followed by the potatoes and bell peppers. Sprinkle with seasonings.
