  1. Whole wheat bread - 8 slices
  2. Red onion - 1/2 cup, chopped
  3. Yellow bell peppers - 1/2 cup, chopped
  4. Fresh spinach - 1 cup
  5. Vegan cream cheese - 1 packet (about 80g)
  6. Black olives - 1/4 cup, pitted and sliced
  7. Salt and pepper - to taste
  8. Garlic powder - 1 teaspoon
  9. Vegetable oil - for frying

Preparation Method Steps:

  1. Preheat the oven to 375°F.
  2. In a frying pan, heat some vegetable oil and add the chopped red onion. Saute for 3-4 minutes until softened.
  3. Add the chopped yellow bell peppers and continue cooking for another 5 minutes.
  4. Add the fresh spinach and cook until the spinach is wilted. Season with salt, pepper, and garlic powder. Remove from heat and let cool.
  5. Once cooled, mix in the vegan cream cheese, black olives, and stir well.
  6. Take each slice of whole wheat bread and spread the mixture evenly on one side. Place the bread slices on a baking sheet.
  7. Bake for 15-20 minutes or until the edges are golden brown.
