  1. Peel and wash the carrots. Cut into long thin strips or desired shape.
  2. In a pot, bring water, vinegar, sugar, salt, and optional chilli flakes to a boil.
  3. Add the cut carrots and return to a boil.
  4. Once the carrots are tender, reduce the heat and let the carrots simmer in the vinegar mixture for about 15 minutes.
  5. Remove from heat and add bay leaves for flavor (if using).
  6. Let the carrots cool in the vinegar mixture.
  7. Transfer to a serving bowl or container and refrigerate for at least an hour before serving to allow the flavors to blend.
