Preparation Method Steps:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown the ground chicken over medium heat. Drain off any excess fat.
  3. Add the onion, green and red bell peppers, and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in the diced tomatoes, black beans, corn, and taco seasoning mix. Bring to a simmer and cook for 10 minutes, or until the sauce has thickened.
  5. In a greased 9x13 inch baking dish, layer 6 lasagna noodles. Top with half of the chicken mixture, then half of the sour cream, and half of the cheddar cheese.
  6. Repeat layers.
  7. Sprinkle with Monterey Jack cheese.
  8. Bake for 30-35 minutes, or until the cheese is melted and bubbly and the lasagna is heated through.
  9. Let stand for 5 minutes before serving.
