Preparation Method Steps:

  1. Preheat the oven to 200°C (400°F). Line two baking trays with baking paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg yolk and vanilla extract.
  4. Gradually add the flour, mixing until a dough forms.
  5. Roll out the dough on a lightly floured surface to a thickness of 5mm (1/4 inch).
  6. Cut out circles from the dough using a 6cm (2 1/2 inch) cookie cutter.
  7. Place the circles on the prepared baking trays.
  8. Use a smaller cookie cutter or a straw to cut out a hole in the center of each circle.
  9. Bake for 10-12 minutes, or until golden brown around the edges.
  10. Allow the cookies to cool on the baking trays for a few minutes before transferring to a wire rack to cool completely.
  11. To assemble the wreath cookies, spread a thin layer of raspberry jam onto the flat side of one cookie.
  12. Top with another cookie and press down gently.
  13. Repeat until all the cookies are assembled.
  14. Dust with icing sugar before serving.
