Preparation Method Steps:

  1. Using a spiralizer or a sharp knife, create zucchini noodles.
  2. Cook the rice noodles according to the package instructions. Drain and set aside.
  3. In a large skillet, heat the vegetable oil over medium-high heat. Add the eggs and cook until scrambled. Remove from the skillet and set aside.
  4. Add the zucchini noodles, carrots, bell pepper, and stir-fry for 2-3 minutes, or until the vegetables are tender.
  5. Return the rice noodles and eggs to the skillet. In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, sesame oil, ginger, garlic powder, and red pepper flakes.
  6. Pour the sauce over the noodles and vegetables and stir to combine.
  7. Cook for 1-2 minutes more, or until the sauce has thickened and the noodles are heated through.
